Walnut and cherry are our go-to woods. Walnut for when you want a deep dark brown, and cherry when you want a medium reddish-brown that darkens beautifully with age. We use maple as a secondary wood because of the beautiful contrast it creates, but also because its hardness makes our drawers smooth and durable. Maple makes a wonderful primary wood though, if you're looking for a light-colored piece, and many other woods are also wonderful, like mahogany — a classic option, and the noble white oak, rustic, coarse-grained, and with beautiful rays that show up when quartersawn.
